Lamb Knuckle can be hard to find in retail. Most often, this cut is available at a butcher’s shop after placing a special order. With its rich flavor, infused by the presence of bones in this cut, it is a pity that the Knuckle is not as popular or prized as some of the other cuts of Lamb. The Knuckle contains meat, bones and a good amount of cartilage, which turns into scrumptious gelatin when cooked for a few hours.
