Pig - Fatback

As can be guessed by its name, Fatback is a layer of fat taken from a pig’s back. It is used in manufacturing lard, sausages and a type of European bacon. Due to its higher water content, it is not considered as well-liked as the leaf lard, which retains its shape and size when cooked.
