Tongue is a tough portion of meat, which is high in cholestrol and fat. The average weight of a Beef Tongue is around 3-4 lbs (1.3-1.8kg). and can either be sold as it is or after brining.
Cooking the Tongue is a multistep process as removing its prickly external covering can be a cumbersome task. First, it is doused in cold water for a few hours before trimming the fat tissues off it. Next, the Tongue is boiled in water, sometimes with vegetables. Once the meat is tender, the meat is allowed to cool and then peeled off the covering. After skinning, this cut of meat is ready to be used in cooking. Since it is a tough portion of meat, it is best to braise or stew it. It can also yield good results if roasted and is used in many different cuisines all over the world.
Taken from the mouth of a cow, the Tongue cut is extracted by cutting it off its root and getting rid of the windpipe attachment. Blood vessels connected to the tongue are also removed to produce a lean, meaty portion.
The use of Tongue as a food item can be traced back to the time of Paleolithic people. In fact, the hunter-gatherer diet was known to include rich cuts of Beef, such as the Tongue, brain and bone marrow.
