Butterfly Steak is a relatively newer loin cut introduced in Lamb retail. It is creatively sliced to give the appearance of a butterfly. In reality, Butterfly Steak is a double Loin Chop that has been cut from the middle and opened up in such a way that it appears to have wings on both sides. Much like any other cut from the loin, this steak is tender and full of flavor.
