As its name suggests, Salt Pork is the portion of Pork that is cured with salt. Based on the part of pig’s carcass where the cut is taken from, Salt Pork can be streaky, fatty or lean. It is quite similar in appearance to unsliced Slab Bacon, but is marked by a higher degree of saltiness and is not cured or smoked like traditional bacon. Salt Pork is usually sold in slabs much like Slab Bacon.
