Cow - Topside Minute Steak

Topside Minute Steak is a tough cut of Beef, which is generally a lean cut with very little marbling. This is a cut that benefits from quick cooking as cooking it for a longer time can dry its moisture out completely and result in a stringy piece of meat.

The methods of preparation for this cut are decided by its tough texture. For this reason, these steaks are generally sliced very thin and cooked on high heat. Before cooking, they can be marinated with seasonings, dry rubs and sauces and then cooked quickly on a high flame while constantly stirring. To add flavor to the dish, different vegetables can also be added to the stir-fry, which is what makes it a good cut for Asian stir-fried Beef. Many people also recommend this cut for barbecuing followed by a few hours of marination.

The section of the round where this cut is taken from is located right on top of the steer’s hind legs.

The 'Topside' in this cut's name refers to its location, which is literally at the top side of the cow's back legs.

In the American Beef terminology, Topside is referred to as Top Round.
